James has worked with some of Chicago's best food operations such Francesca's restaurant group, Goddess and Grocer, Mindy Segal's Hot Chocolate, City Winery and Olive Mediterranean Grill as director and vice president of operations. His area of expertise is in operational analysis and what he calls the three P's, policy, procedure and practices.
